Milk Free and Gluten Free Meatloaf

Transforming an old family favorite

milk and gluten free meatloafWe are a gluten free household with a milk allergy (fun eh?) so I had to come up with a milk free and gluten free meatloaf.

Gluten free versions of meatloaf can be amazing but since milk is often used, that was a no, and the potato flakes I used to use (before we knew about the milk allergy) has powdered milk. Those had to be tossed out.

After experimenting, I came up with a milk and gluten free meatloaf that I hope you’ll love. I went all organic but it’s certainly not necessary.

Ingredients:

1 lb ground pork – grass fed
1 lb ground beef – grass fed
2 eggs
1/2 cup almond milk
1 tablespoon Dijon or 1 teaspoon horseradish (my preferred version)
1 teaspoon salt
1/3 cup heaping ground gluten free oats
1/2 teaspoon dry oregano
1/2 teaspoon dry basil
1/2 teaspoon dry summer savory (yum!)
Organic Ketchup

Preheat oven to 350 degrees.

Mix eggs, almond milk, Dijon or horseradish, and salt in a large bowl. Add the ground oats and spices and stir well. Add the ground pork and ground beef, mix with your hands or a study spoon.

Put on a cookie sheet covered in foil and shape into a loaf. Smear the ketchup over the top. I put mine on an oven safe cookie rack that’s also covered in foil (a trick I learned from America’s Test Kitchen).

Bake your milk and gluten free meatloaf for an hour and fifteen minutes. Remove from the oven and let rest for 5 or 10 minutes.

I usually serve this with some steamed broccoli and a chop salad. On occasion I throw in baked potatoes.

If you want a hardy meal, this will satisfy. You could add cooked chopped onions when you add in the meat. In our house, that doesn’t go over too well with my kids so I leave those out.
